The Edible Campus Gardens are managed by the Sustainability Resource Center as outdoor laboratories for a variety of academic courses. They also serve as demonstration gardens to showcase the beauty and diversity of edible landscaping in an urban setting. Additionally, the gardens provide service opportunities for student volunteers from the Bennion Community Service Center and others, as well as K12 education programs.

Sponsors and Donors
The Edible Campus Gardens have received grants from the Sustainable Campus Initiative Fund and the R. Harold Burton Foundation. In addition, local company EcoScraps donated high-quality compost and local landscape architect Lars Erickson (GSBS Architects) provided pro bono design services. Peaceful Valley Farm Supply provides discounts to the gardens project through their school gardens program.
